Grassland Farm Chard Delight
Ingredients:
*3 tbsp. olive oil
*1 bunch of fresh onions with greens (or use scallions or chives) chopped
*1 can Garbanzo beans (drained) or 1 cup dry beans soaked and parboiled
*Salt and pepper to taste
*1 bunch of Swiss Chard (and add Chioggia greens as desired)
*1 tomato sliced (or 1 can diced tomato)
*1/2 lemon juiced
*1/2 pound of plain goat cheese
Directions:
Heat olive oil in a large skillet. Stir onions and greens; cook and stir for 3 to 5 minutes, or until soft and fragrant. Stir in garbanzo beans, and season with salt and pepper; heat through. Place chard in pan, and cook until wilted. Add tomato slices, squeeze lemon juice over greens, and heat through. Add goat cheese by the spoonful and cook 2-3 minutes. Serve with brown rice and season with salt and pepper as desired. This is also a delicious mix for a burrito! Just add some lettuce and a touch of salsa. Enjoy!
