Garlic is by far one of our most favorite flavor adding ingredients as well as one of our favorite crops to grow! In almost any recipe calling for garlic we easily double or triple the amount called for. Garlic is widely known to be good for the immune system especially when eaten raw. We like to throw garlic into stir fry, pasta sauce, or sauté just about last so as not to overcook or burn it! We think garlic should be included in just about any savory recipe from vegetarian stir fry or chili, to baked chicken, to pasta dishes, to beans and rice and BEYOND! There is no limit to recipes in which to include garlic so be creative!
Garlic scapes are the flower of the garlic plant and can be used just like garlic! They are a bit more mild and slightly sweet. You can add them to a pasta dish, a sauté, or even make a pesto. Here is a great recipe!!
Garlic Scape Pesto
- ½ lb. of garlic scapes (about 1/3 of what you have!)
- ½ cup of toasted pine nuts, walnuts, or pecans (roasted 5-10 minutes)
- ¼ to ½ cup of olive oil
- Parmesan or Romano Cheese to taste (optional)
- Process scapes in a food processor until finely chopped. Add nuts until finely chopped. Add olive oil with motor running until you reach desired consistency. Add cheese.
Aioli, also known as garlic mayonnaise, is delicious on sandwiches or wraps or as a dipping sauce for fried green tomatoes!
- 4 cloves garlic
- 2 egg yolks
- 1 cup extra virgin olive oil
- 2 teaspoons lemon juice
- salt and ground black pepper to taste
Refrigerate the olive oil until well chilled. In a food processor mince the garlic with a bit of salt. Add the eggs and run until combined scraping the sides as necessary. Gradually add chilled oil while the food processor is running until light and creamy. Season with salt and pepper. Stir in lemon juice. Refrigerate until ready to use.
Herb Butter~ This amazing butter can be used for spread on any warm bread.
1 lb. salted butter
Any fresh herbs minced: oregano, thyme, marjoram, basil, parsley! Be creative!
1-2 tbsp. chopped garlic
Let the butter warm to room temperature. Mix in herbs and garlic thoroughly and spread on bread!
