This A”Maizing” cornbread can be made with either our Hopi blue cornmeal or our Roy’s Calais cornmeal, which is red/gold. It is incredibly moist and delicious!  A great paring with chili or Mexican pie.

A”Maizing” Cornbread


*1/2 cup butter

*1/2 cup sugar (or 1/4 cup honey)

*2 eggs

*1/2 cup yogurt or sour cream

*1/2 cup of buttermilk or sourmilk

*1/2 tsp. baking soda

*1 cup cornmeal

*1 cup flour

*1/2 tsp. salt


*Melt butter in medium cast iron (9″) or medium sauce pan over medium heat. Add sugar and mix well. Remove from heat, add eggs, and beat quickly.

*In a separate bowl, whisk together yogurt or sour cream and buttermilk. Add the baking soda and mix well. Add this buttermilk mixture to the cast iron and mix well.

*In a separate bowl, mix cornmeal, flour, and salt. Add mix to sauce pan and mix lightly until combined, but with some lumps remaining.

*If you are using a cast iron place directly into the oven to bake.  If not, grease an 8″ square pan and put cornbread mixture into that to bake.

*Bake at 375° for 35-40 minutes or until cooked thoroughly. Enjoy with or without butter or jam!
